Recipe: fucking awesome beer cheese soup

For totally winging this, it turned out amazing so I need to save this recipe.
Fucking Awesome Crockpot Beer Cheese Soup:
* 1/4 - 1/2 raw chicken (dark meat)
* 2 c Water
* 2 c beer (I used Simpler Times Lager)
* 2 large Russet potatoes, peeled and chopped into small pieces
* 1 c chopped yellow onion
* 2 c mixed frozen veggies (I used Organic Foursome)
* 1 tsp minced garlic
* 1/2 tsp pepper
* 1/2 tsp salt
* appx. 1.5 lb sharp cheddar cheese (I used about 1 lb Wisconsin Extra Sharp White + about .5 lb New York Extra Extra Sharp)
* 1 c whipping cream
1. Put chicken in crock pot and add potato, onion and veggies. Pour over water, then beer, and add salt, pepper and garlic.
2. Cook on low for 8+ hours or high for 4+ hours.
3. Remove chicken (it will fall apart). Remove skin, bones and nasty bits and shred what's left. Mash the veggies lightly with a spatula or potato masher (or whatever you have), then stir the chicken back in.
4. About 10-20 minutes before serving, stir in cream, then stir in shredded cheese in small batches, making sure it melts before adding more.
Enjoy! And be warned that it may solidify at room temperature/in the fridge, I'm not sure if it will yet.
